A novel cake made with handmade muesli wafers, sandwiched between a velvety-textured cherry-myrtle curd cheese syrup made to our chef’s recipe. Don’t be afraid of the thyme flavour of the curd cheese souffle, it offers an excitingly tart combination of flavours. The cake is decorated with filleted orange, pear and fresh raspberries. The cake is soft!
The golden raisins inside the mousse add juiciness to the cake.
Also available as a lactose and gluten-free version with rice and corn flour, which is slightly crispier (the curd cheese is also lactose-free in this case).
